Iron-Rich Raisin Muffins/Loaf

Makes 12 muffins or 1 loaf

Ingrédients

  • 1/2 cup (125 ml) rolled oats
  • 1 cup (250 ml) milk
  • 1 cup (250 ml) flour
  • 1 cup (250 ml) baby cereal with added iron (rice or oats)
  • 1 teaspoon (5 ml) cinnamon
  • 1 teaspoon (5 ml) baking powder
  • 1/2 teaspoon (2 ml) baking soda
  • 1/2 teaspoon (2 ml) salt
  • 1/2 cup (125 ml) raisins or chopped dried dates
  • 1/2 cup (125 ml) vegetable oil
  • 1/2 cup (125 ml) packed brown sugar
  • 1 egg

Mode d'emploi

  1. Preheat oven to 350°F (180°F).
  2. Line a 12-cup muffin pan with muffin cups or grease a 9 x 5 inch (23 x 13 cm) loaf pan.
  3. In a large bowl, mix oats and milk.
  4. In a medium bowl, mix flour, baby cereal, cinnamon, baking powder, baking soda, salt and raisins.
  5. Add oil, brown sugar and egg to oat and milk mixture. Mix well.
  6. Gently mix together wet and dry ingredients, until just combined.
  7. Pour batter into muffin cups or loaf pan. Bake according to the following time chart.

Muffin pan = 20 minutes
Loaf pan = 30 minutes
